Wild Sockeye is esteemed in the fish market for its firm texture and bright, red flesh. It averages four to eight pounds dressed. Fat content is generally higher than the Silver Salmon. Available from late May through July, the species is best suited to summer grilling. Most of the sockeye catch is exported to Japan, where it is the favorite salmon.
